Roasted Turkey

My family always has a roast turkey on Christmas (because Thanksgiving is the best meal
of the year, why not do it twice?).
To slow cook a PERFECT turkey with zero effort and a lot of math: preheat your oven to
250 degrees. Yes, that is the very low temp of 250 degrees Fahrenheit. Trust the process.
Take your thawed turkey, place it breast-down in a lidded turkey roaster or an oven-safe
roasting bag, and prepare to do some math.

You're going to cook your turkey for 20 minutes per pound plus 20 extra minutes. For
example, if you have an 18-pound turkey, you're going to bake it for 6 hours and 20
minutes (multiply number of pounds by 20, add 20 for the total minutes, and then divide
by 60 to get the hours).

Once you have your timing equated, place your roaster or roasting bag in the oven, set
your timer, and walk away! Do not check on it. Do not open the oven. Trust the process.
Go watch the Dr. Who Christmas special and wait.

After your time is up, remove your turkey from the oven but keep it covered! Don't try to
open it. No, you can't eat the skin yet. Trust the process.

Let it sit for 60-90 minutes while you bake everything else. NOW you can open your
turkey! You will not need to carve this turkey--it will fall apart if you try to lift it out of the
pan. And it will still be crazy hot, be careful! Pick off what you need for dinner and serve.
